Owner of I Love You to the Moon and Back Bakery in Eastlake says customers have become like family – News-Herald

Rachel Wiley originally went the nursing school route after high school, but her passion for baking led her to open I Love You to the Moon and Back Bakery in Eastlake.

Located at 36091 Vine St., the bakery opened in November of 2020 and Wiley decided to name it after her mother.

“I love you to the moon and back is a quote from the book ‘Guess How Much I Love you,’ ” Wiley said. “It came out in 1994, the year I was born, and my mom always read the book to me. I have a tattoo of it on my back. I’ve always been super close to my mom. She’s my rock from her, so I wanted to name it after her. ”

Since it is a trademark quote, Wiley had to go through the United Kingdom, the country where it was published.

“It took six months for Walker Books to approve me to get rights for it — tons of board meetings,” she said. “It was crazy. So many people come in and they’re like, ‘I say it to my kids all the time.’ ”

For Wiley, she has enjoyed all of the friendships she has formed through her business since opening.

“People have become like family to me,” she said. “We just talk about life and I feel like I have a lot of little parent figures who come in.”

Wiley started baking in high school.

“I took a culinary class and I was obsessed with it, and I loved the teacher,” she said. “I went to nursing school and I was still baking the whole time. Somebody brought up, ‘Go to pastry school.’ I was like that’s not a thing, but turns out it is a thing, so I went.”

During her time at pastry school, Wiley was in a class of five people, which made it competitive. However, she said she was still in the top tier of her class. After school, Wiley went on to sell her baked goods at farmer’s markets for about five years before opening her bakery.

“I was baking from my home and then with (the coronavirus), there were so many orders that it just got way out of hand,” she said. “I was like, I need a store, and that’s where it came from.”
